Sugar Rush: Jacksonville Candy Companies Talk Holiday Season Spike, Candy Production - Peterbrooke Chocolatier

In the candy world, the holidays are crunch time with stores doing 20 to 30 percent of annual sales in just six to eight weeks leading up to Christmas according to a recent article in the Jacksonville Business Journal. As the days until Christmas tick off, Peterbrooke Chocolatier had the chance to speak with the Jacksonville Business Journal and share how the holidays impact store operations.

According to Peterbrooke Chief Operating Officer Jeff Smith, "Holidays are a great time for chocolates and Peterbrooke is more of a premium gift chocolatier than selling boxed chocolates off the shelf," Smith said. "Our chocolate covered popcorn is by far our most popular product – probably 25 to 35 percent of our sales. But toffees, custom products like high-heeled chocolate shoes and gift baskets are also popular at the holidays."

People in Jacksonville, he said, know that "when they see the blue bag with the pink swoosh on the top, they're about to get a great gift." Peterbrooke chocolate is made in the Swiss style, using more cocoa butter and coming out quite smooth.

"We do want to open four to six new locations throughout the Southeast next year," he said, "and continue to drive brand awareness in existing markets. We want to continue to be an innovator."
